Wholesome Whole Grain Honey Bread
Ingredients
400g whole wheat flour
240ml warm water
2 tablespoons (30ml) honey
10g active dry yeast
1 teaspoon (5g) salt
2 tablespoons (30ml) olive oil
30g mixed seeds (such as sunflower, pumpkin, or flax seeds)


Traditionally
In a large bowl, dissolve the honey in the warm water. Sprinkle the yeast over the water and let it sit for about 5 minutes, until it becomes frothy.
Stir in the whole wheat flour and salt until a dough starts to form.
Knead the dough on a floured surface for about 10 minutes, until it becomes smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Preheat the oven to 190°C (375°F).
(optional) Add a waterbath, by filling another oven tray with water and put it below the bread's tray.
Punch down the dough and shape it into a loaf. Place it in a greased loaf pan, cover it, and let it rise for another 30 minutes.
Brush the top of the loaf with olive oil and sprinkle the mixed seeds on top.
Bake the bread for 35-40 minutes, or until it's golden brown and sounds hollow when tapped on the bottom.
Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Using a bread making machine
Place all the ingredients into the bread making machine according to the manufacturer's instructions, usually starting with the wet ingredients and then adding the dry ingredients on top.
Select the whole grain or basic bread setting on the machine and start the cycle.
Once the cycle is complete, carefully remove the bread from the machine and let it cool on a wire rack before slicing.
